This is one of my new favorite recipes.

I’m not big on soups in general BUT this is inspired by the chicken soup you can order at Soho House in West Hollywood. For some reason I became very attached to this dish and also only ever ordering it with french fries. Trust me when I tell you that this goes together. I mean, fries go with everything.

Spicy Chicken, Kale, & Barley Soup

Ingredients:

  • 8 cups chicken broth (low sodium)
  • 2 carrots, diced
  • 6 celery sticks, diced
  • 1 bundle of Kale, chopped & stems removed
  • 1 ½ cups of Pearled Barley
  • 4 chicken breasts
  • 2 bay leaves
  • salt & pepper (to taste)
  • 1 tsp garlic powder
  • 1 tsp Trader Joe’s Umami Seasoning
  • Cayenne (to taste)

Directions:

  1. In a large stock pot, sauté onions, carrots, & celery with olive oil
  2. Once veggies are translucent add in chicken broth, chicken and seasonings. Bring to a boil then reduce to a simmer for an hour
  3. Once chicken is cooked thoroughly, remove, shred and return to the pot
  4. Add in Pearl Barley and simmer for 30 mins
  5. Add in Kale 10-15 mins before serving
  6. Enjoy!

Air Fryer Twice Fried French Fries

Ingredients:

  • 6 russet potatoes
  • olive oil spray
  • Salt & Pepper (to taste)
  • 1 tsp garlic powder

Directions:

  1. Wash and semi peel potatoes
  2. Chop potatoes into ¼ inch strips
  3. Soak strips in cold water for 30 mins and then rinse (to remove excess starch) & pat dry
  4. In a large bowl, toss strips in olive oil spray
  5. Put into air fryer at 330 degrees for 6 mins
  6. Remove and re-spray with olive oil spray and add seasonings, toss
  7. Put back into air fryer at 350 for another 9 minutes until golden brown and crispy

Roasted Garlic Aioli

Ingredients:

  • 3 heads of garlic
  • olive oil
  • Salt & Pepper (to taste)
  • 1 cup mayo
  • 1 tsp Worcestershire
  • juice from 1/3rd lemon (to taste)

Directions:

  1. Pre-heat oven to 425 degrees
  2. Remove 1st layer of skin on the heads of garlic
  3. Chop off the top of the cloves of garlic (while still connected)
  4. Drizzle each head with olive oil and generous amounts of S&P
  5. Wrap into individual balls with foil and place on baking sheet
  6. Put in the oven for 40-60 mins depending on your preference. (I went for about 45 mins)
  7. Take out and let cool
  8. In a medium bowl, squeeze or pick out the cloves of garlic and mash with a fork until formed into a paste
  9. Add mayo, Worcestershire, lemon juice and S&P and mix until combined
