Ingredients:
- romaine lettuce
- kale
- eggs
- protein of your choice (I use shrimp mostly)
- bacon
- brown sugar
- fresh ground pepper
- garlic salt
- red pepper flakes
- avocado
- your favorite caesar dressing *I use Trader Joe’s vegan caesar because I’m lactose intolerant*
The prep for this is simple.
Preheat your oven to 375 degrees
Lay a piece of foil on a baking sheet and spray with cooking spray
Take out your bacon and cut it into 1 inch pieces. Lay them out on the foil and sprinkle a light coating of fresh cracked pepper as well as a bit of brown sugar. Rub these seasonings into the pieces to make sure they stick on both sides.
Put in the oven for 6:30 minutes, flip them over and then do another 5:30- 6 minutes. You want them to look a bit darker brown and glistening
Hard boil 2- however many eggs you want
Take your protein (chicken, shrimp, etc) and season it with salt, pepper, garlic and any other of your favorite spices.
Heat in a pan until cooked thoroughly and set aside
Ok so I use a mixture of romaine and kale when I’m going all out. Sometimes I only use romaine and sometimes its only kale, totally your call on what you want your base to be.
In a large bowl, put down your lettuce mixture, top it with your brown sugar bacon pieces, sliced hard boiled eggs, the protein, and sliced avocado if you like.
I top everything with a bit of red pepper flakes before topping the salad with my favorite vegan caesar dressing
